Yep, If you can obtain good veneers in the right thickness', then it's the way to go! You'll be able to shape it much more easily, and there won't be residual stresses in the laminates after shaping.
Lay tham in alternating directions (one lengthways, one crossways,one lengthways...). Use an odd number of laminates, so you end up with lengthways grain top and bottom.
